Street pancakes in Nigeria are closer to a thick, sweet, slightly heavy drop-scone than to the thin French kind. The batter is flour, sugar, milk and egg, sometimes with nutmeg, and it is fried in a shallow pan until the outside sets crisp and the middle stays soft.
Putting fried chicken legs beside them is the interesting move. Sweet and savoury on one plate is not the usual pairing here, but it works for the same reason it works anywhere: the sugar makes the salt taste saltier, and the fat carries both.
