Beans and rice together is one of the oldest good ideas in cooking, and versions of it turn up on every continent that grows both. It is not tradition for its own sake — the combination is genuinely better than either half.

In Nigeria this arrives as a spiced, peppery plate rather than a plain one: rice and beans cooked with pepper, onion and oil until the grains take on colour and the beans go soft enough to give under the spoon.

It is cheap, it feeds a lot of people, and it keeps. Which is exactly why it survives.

How it sits with your body

This is the one worth understanding properly. Beans and rice each contain incomplete protein — beans are short of one essential amino acid, grains are short of a different one. Eaten together, each covers the other's gap, and the result is a complete protein comparable to meat.

That is why this plate has fed people for centuries without meat being anywhere near it. On top of that, beans bring a lot of fibre and release their energy slowly, so the meal holds for hours.

Worth knowing

Beans cause gas, and there is no way around that beyond eating them often enough that the gut adjusts. Soaking them before cooking helps a little.
