Cassava powder makes the swallow that carries the meal. Boiling water goes in, it is turned hard against the side of the pot, and it comes out smooth and stretchy — a vehicle for soup rather than a thing you would eat alone.

Cassava itself is remarkable and slightly dangerous. Raw, the root contains compounds that release cyanide; every traditional way of preparing it — soaking, fermenting, grating, drying, frying — exists to drive those off. Generations worked that out long before anyone could explain the chemistry, and the processing is not optional.

The green vegetables beside it do the nutritional heavy lifting. Ugu, spinach or waterleaf, cooked down with pepper, onion and oil until they collapse into something spoonable.

How it sits with your body

Cassava is almost entirely carbohydrate — filling, cheap, and very low in protein. That is exactly why it is never eaten alone: what goes beside it has to supply everything it lacks.

The greens are where this meal earns its keep. Dark leafy vegetables carry iron, folate, vitamin A and vitamin C, and cooking them with a little oil actually helps the body absorb the vitamin A rather than losing it.

Eat the swallow without the vegetables and you have eaten starch. Eat them together and you have eaten a meal.

Worth knowing

Swallow is dense and easy to over-eat, since it goes down without much chewing. Properly processed cassava is completely safe; badly processed cassava is not, which is why it is worth buying from someone who knows what they are doing.
